
This breakfast recipe is so healthy and naturally sweetened by the ripe bananas and apple sauce. This is best enjoyed warm and topped with greek yogurt, nut butter, maple syrup or honey! Since this makes 6 portions, you can change your toppings every day to avoid getting bored!
Keep them in the fridge for up to a week. You can also freeze portions individually and warm them up in the oven.
Ingredients for 6 breakfast portions
- 2 cups old fashioned oats
- 2 large eggs
- 2 very ripe bananas
- 1 cup unsweetened almond milk (or any other dairy or non dairy beverage)
- 1/2 cup of homemade or unsweetened apple sauce
- 1 teaspoon baking powder
- Optional: 1/2 cup nuts, berries or dried fruit
Preheat your oven at 450F on convection bake.
Start by mashing your bananas in a large bowl. Add in your eggs and combine well. Then add your apple sauce and baking powder. Mix well to combine. Add your oats and milk and mix well. Here you can add your optional fruits or nuts and mix.
Spray a baking dish (I use an 11 cup/2.6 L capacity pirex – see picture at the end) and add your mixture. You can use a 8×8 inch cake baking dish.
Bake for about 25 minutes or when the edges and top turn golden brown.
Enjoy with your favorite toppings! Get creative to avoid bordom! This recipe contains no added sugar!!
