
Raisin bran muffins are not the most popular but they are my favorite! Store bought are always great but they have a ton of sugar in them so I created my very own recipe.
Ingredients
- 2 cups whole weat flour (you can also use all-purpose if you want, however this is healthier)
- 3 cups bran cereal (any type) – if you’re using a thicker type type of cereal and you don’t want pieces, you can blend them into a powder.
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinammon
- 1/2 tsp ground nutmeg
- 2/3 cup packed brown sugar
- 1/2 cup applesauce
- 1/4 cup olive oil
- 2 eggs
- 1-1/2 cups milk (dairy or non-dairy) – I used almond milk in this one!
- 1 cup raisins
Preheat oven to bake at 375F and spray your muffin tins with non stick spray or add muffin cups. Start by mixing all dry ingredients together without the cereal in a large mixing bowl. If you’ve blended the cereal into a powder, you can add them to the dry mix as well.
Seperatly, wisk eggs to combine. Then add all wet ingredients to dry mix one by one mixing in between. When well combined, add cereal and then raisins.
Bake for about 30 minutes of until tooth pick comes out clean. These should comes out moist and warm. Let cool or enjoy warm for breakfast!
Note: feel free to get creative with the spices if you like a pronounced taste
