
I LOVE fresh pesto! This recipe is perfect to eat immediately with any type of pasta you like – my favorite is linguine. You can also use it as a bread dip (you would just need to add some olive oil), with caprese salad or any other way you love to eat pesto!!! Sometimes I use it as a spread in a cheese panini! YUM
Ingredients
- 2-3 cups fresh basil (depends how much you pack your cups!!)
- 1/3 cup good quality EVOO (adjust for consistency by adding teaspoons at a time)
- 1/4 to 1/3 cup freshly grated parmigiano reggiano
- 1/4 cup toasted pine nuts (you can also use walnuts)
- 1 garlic clove
- salt + fresh ground pepper to taste
Blend everything together and enjoy!
This recipe can also be frozen to be used during the winter! This way, you can enjoy homemade pesto all year long. I promise that once you’ve tried homemade, it’s impossible to eat the store bought kind!
